Refried Beans

Beans, beans, they’re good for your heart… Sorry, I had to say it. Hello again and happy Easter.  My family is not always your traditional ham and eggs kind of group when it comes to Easter.  Don’t get me wrong, we love the meal, but we love to mix it up sometimes.  So when I called my mom up this week to ask her what we were having, I was very happy to find out we were having Tacos.

If you have seen or had my Turkey Tacos then you know why I am so happy!  One of the things my parents do differently is use ground beef instead of turkey. If you get a chance, try out my turkey taco recipe but substitute the turkey for ground beef and make sure you drain at least half of the grease out of the meat before you put in the potatoes.

So, like I was saying, I was really excited for Easter dinner.  One of the items my parents always make with tacos, if they have the time, is refried beans from scratch.  Although they take close to a whole day to make, they are definitely the best beans I have ever eaten.  So, naturally, I wanted to see what they would be like with Arty’s Party Rub.

I asked my mom for the recipe and told her I would bring some beans for dinner.  She, of course, made some backups which are becoming leftovers because mine turned out great! Someone even said they were better than the originals! So, if you love beans and are looking to try a new, fairly simple but lengthy recipe, then try out my refried beans recipe and tell me what you think!

Refried Beans

Ingredients

  • 2 Tbsp of Arty’s Party RubIMG_1819
  • 2lb bag of pinto beans rinsed
  • 5-6 pieces of bacon sliced into small skinny strips
  • 4 tomatillos husked and rinsed with stems removed
  • 1 medium size onion whole
  • 1 large Anaheim pepper diced
  • 1 Serrano pepper diced
  • 1 7 oz can of Herdez Salsa Verde or 8 oz of fresh salsa verde
  • water

Tools

  • 6 qt stock pot or larger
  • stirring spoon
  • knife
  • cutting surface
  • potato masher

Steps

  1. Rinse and check the pinto beans for rocks (sometimes they have rocks in them).
  2. Place the beans in the pot with enough water to go at least 1 inch above the beans and place bring them to a boil on high heat.
  3. Once they reach a boil put them to about medium heat and let them continue to boil for 1 hour. Check them every 10-15 min and stir and add water as necessary.
  4. Add the onion and the bacon to the pot.  Stir well and continue to boil for 1 hour. Check them every 10-15 min and stir and add water as necessary.
  5. Add the rest of the ingredients and stir well.  Continue to boil for 4 more hours stirring every 10-15 min and adding water as necessary.

  6. Continue to boil and stir every 10 min but do not add more water.  The beans will gradually begin to thicken up.  As soon as they are as thick as you want mash them with the potato masher until the majority of the beans are dissolved.
  7. Eat the beans.
