Pork Chops and Apple Sauce

Another quick recipe for all of you busy people out there.  Normally I don’t cook pork chops. Lately, I’ve had numerous people tell me that Arty’s Party Rub is delicious on Pork Chops. So many, in fact, that I couldn’t take it anymore.  I had to try them out!

Pork chops are an interesting type of meat. You can bake em, fry em, bbq em, slow cook em and even stuff em.  For me, I like to sear mine in a cast iron skillet.  Not only does it create a great browning on the outside, but it helps keep in the moisture as well. Plus, it only takes about 10 min to cook!

I like a nice center cut pork chop without the bone.  Now, I know some of you are saying, blasphemy, pork chops without a bone! It’s mainly a preference of convenience as I find it easier not to eat around the bone and they were on sale at the market this week :).  If you’re cooking with the bone in, make sure to add a minute or so to each side when you cook it.

Rate Pork Chops and Apple Sauce

 

Ingredients:

Tools:

  • Cast Iron Skillet
  • Tin Foil
  • Tongs

Steps:

  1. Heat the cast iron to medium high heat.
  2. Place a generous amount of Arty’s Party Rub on each side of the Pork Chops.
  3. After the skillet is hot (~10min) add enough oil to coat the pan where the chops will sit.PCASSkillet
  4. Let the chops sit for 3 min then flip over (1 min extra if bone in) and let them sit for another 3 min. Internal temperature at the thickest point should be about 140 degrees.
  5. After you have cooked both sides, hold the chops on each end for about 10-20 seconds giving the edge a nice sear.PCASSides
  6. After all edges are seared place the chops on a piece of tin foil and wrap them letting them sit for about 5 min.PCASFoil
  7. Eat the pork chops with apple sauce.
